A familiar face was recently hired at the local Cooperative Extension.

Lindsey Edwards is now the Extension Agent for Family and Consumer Sciences and she has done great work since she joined the staff.

Edwards, who earned a Bachelor’s degree from Appalachian State University in Family and Consumer Science and a Master’s degree from Western Carolina in School Administration, spent 10 years teaching Family and Consumer Science at Polk County High School. She also served in an administrative role within the Vocational Education Department for the past three years. 

The N.C. State Extension Family and Consumer Sciences programs focus on improving human health and reducing chronic disease and illness with evidence-based programs addressing nutrition (healthy eating), physical activity, local foods, food preservation and food safety. 

In her time with the Polk County Cooperative Extension she has taught classes on bread and butter and grain bowls. She has also helped teach cooking classes to the local 4-H students and is nearing the end of a six-part series on the Mediterranean diet at the senior center.
